Pumpkin Bars
Pumpkin Bars are an easy last minute dessert! Most of these ingredients will already be in your pantry.
Ingredients
- 2 cups sugar
- 1 cup oil
- 4 eggs
- 3 tsp. vanilla, divided
- 1 (15 oz.) can pumpkin
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground cloves
- 2 cups flour
- 2 tsp. baking soda
- 2 tsp. baking powder
- 1 (8 oz.) package cream cheese
- 1/2 stick butter, softened
- 3 cups powdered sugar
Instructions
- Preheat oven to 350º.
- In a large bowl, combine sugar, oil, eggs, 2 teaspoons vanilla, pumpkin, cinnamon and ground cloves. Slowly add in flour, baking soda and baking powder. Mix until combined.
- Pour batter into an 18 x 12-inch baking pan. Bake for 30 minutes or until a toothpick inserted comes out clean. Let cool.
- In a small bowl, combine cream cheese and butter. Gradually add in powdered sugar and remaining vanilla. Once combined, spread frosting on cooled cake.
