Pumpkin Cream Cheese Crepes

For those of you that just can’t stay away from the oh-so-seasonal pumpkin, make Pumpkin Cream Cheese Crepes!

Ingredients

  • 3/4 cup flour
  • 2 tsp. pumpkin pie spice, divided
  • 1/4 tsp. salt
  • 3 eggs
  • 2 Tbsp. sugar
  • 1 1/3 cups pumpkin puree, divided
  • 1 1/2 cups milk, warmed
  • 4 Tbsp. melted butter, divided
  • 1 (8 oz.) package cream cheese, softened
  • 1 tsp. vanilla
  • 1/4 cup maple syrup
  • Whipped cream, pecans or powdered sugar, for garnish

Instructions

  1. In a medium bowl, combine flour, 1 teaspoon pumpkin pie spice and salt.
  2. In another bowl, mix eggs, sugar and 1/3 cup pumpkin. Whisk in milk and 3 tablespoons butter. Add milk mixture to dry mixture and mix until smooth. Chill 1 hour.
  3. In a small bowl, combine cream cheese, vanilla, syrup, remaining 1 cup pumpkin and remaining 1 teaspoon pumpkin pie spice. Set aside.
  4. Brush the bottom of a skillet with remaining butter and heat over medium heat. Pour 1/4 cup batter into pan, cook 2 minutes and flip. Cook 30 seconds. Repeat with remaining batter. Spread 2 tablespoons of filling on each crepe and roll. Serve with whipped cream.
