S'more Cups

This recipe combines the flavors of a classic s’more and peanut butter cookie to create S’more Cups.

Ingredients

  • 1 stick butter
  • 1/2 cup peanut butter
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 2 Tbsp. almond milk
  • 1 tsp. vanilla
  • 1 3/4 cups flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup marshmallow fluff
  • 1/2 cup Nutella

Instructions

  1. Preheat oven to 375º.
  2. In a bowl, cream together butter, peanut butter, and sugars until light and fluffy. Stir in egg, milk and vanilla.
  3. In a medium bowl, combine flour, baking soda and salt. Gradually add to the creamed mixture until well combined.
  4. In the bottom a muffin tin sprayed with nonstick cooking spray, press in about two teaspoonfuls of dough into each cup. Drop a teaspoon of marshmallow fluff and Nutella in the center of each. Roll a teaspoonful of dough into a ball and smash it flat, placing it over the top of the fluff and Nutella. Repeat for each cookie. Bake for 12 to 15 minutes or until golden brown. Cool completely before removing from the muffin tin.
