Quinoa Mac and Cheese
Quinoa Mac and Cheese is a lighter take on a family favorite. With plenty of creamy cheese, the kids won’t even notice a difference!
Ingredients
- 2 tsp. olive oil
- 1 cup chopped green onion
- 1/2 cup diced red pepper
- 1 1/2 cups quinoa, rinsed and drained
- 2 cloves garlic, minced
- 3 cups water
- 1/2 tsp. salt
- 1/2 tsp. seasoned salt
- 2 eggs
- 1 cup milk
- 1 1/2 cups grated Cheddar cheese
- 1/4 tsp. ground mustard
- 1 cup seasoned bread crumbs
Instructions
- Preheat oven to 350º.
- Heat oil in a medium saucepan over medium heat. Add green onion and red pepper; cover and cook for 5 minutes or until tender. Stir in quinoa and garlic. Cook for 3 to 4 minutes, or until grains start to turn opaque.
- Add water and season with salt. Cover and reduce heat to medium-low. Simmer for 15 to 20 minutes, or until liquid has been absorbed. Remove from heat and let stand for 5 minutes.
- Coat 9 x 13-inch baking dish with cooking spray. In a large bowl whisk together eggs and milk. Fold in quinoa mixture, ground mustard and cheese; stir well. Transfer to prepared baking dish and sprinkle breadcrumbs overtop. Bake for 30 minutes.
