Hummus-Coated Chicken

Hummus-Coated Chicken

For your next dinner, make Hummus-Coated Chicken (bonus hummus recipe included)!

Ingredients

  • Hummus
  • 1/4 cup tahini
  • 1/4 cup lemon juice
  • 1 clove garlic, minced
  • 2 Tbsp. olive oil
  • 1 tsp. hot sauce
  • 1/2 tsp. cumin
  • 1/2 tsp. salt
  • 1 (15 oz.) can chickpeas, drained and rinsed
  • 2 Tbsp. water, if needed
  • Coated Chicken
  • 1 lb. boneless skinless chicken breasts
  • 1/2 tsp. seasoned salt
  • 1/4 tsp. freshly ground black pepper
  • 1 cup hummus
  • Smoked paprika, for serving

Instructions

  1. Hummus
  2. In a food processor, add tahini and lemon juice, garlic, olive oil, hot sauce, cumin and salt. Process for 1 minute, scraping the sides down halfway through. Add chickpeas and process until smooth. Add water if needed.
  3. Coated Chicken
  4. Preheat oven to 350°.
  5. Pat chicken dry and season with salt and pepper. Spread a thin layer of hummus over the chicken and sprinkle with paprika. Place on a baking rack over a rimmed baking tray and cook about 30 minutes. Sprinkle with paprika.
