Chipotle Black Bean Burger
Our chipotle black bean burger will not disappoint, filled with healthy veggies, light on calories and full of flavor. This recipe makes 4 burgers and is done in less than 30 minutes! You can easily double or triple this recipe for your next party or gathering.
Ingredients
- 1 (14.5 oz.) can black beans, drained and rinsed
- 2 Tbsp. minced onion
- 2 cloves garlic, minced
- 1/4 cup smoked chopped almonds
- 1/2 cup frozen corn, thawed
- 1/3 cup fresh cilantro, chopped
- 4 Tbsp. jarred chipotle spread, divided or 4 Tbsp. plus 1/4 tsp. cayenne
- 1 egg
- 1/4 tsp. salt
- 4 slices pepper jack cheese
- 4 buns, sliced and toasted
- Mixed greens, sliced avocado and lime wedges for serving
Instructions
- Preheat oven to 425º.
- In a large bowl, add beans and lightly mash with a fork. Add onion, garlic, almonds, corn, cilantro, 2 tablespoons chipotle spread, egg and salt. Mix to combine.
- Using your hands, form mixture into 4 patties. Arrange on a lightly oiled baking sheet and bake for 10 minutes. Carefully flip, add cheese and bake for an additional 8 to 10 minutes. Spread remaining chipotle spread on the bottom of each bun and serve with greens, avocado slices and lime wedges.
