Spring Barley Soup

Spring Barley Soup

Trying to eat healthier? Try this light and refreshing barley soup; barley is a healthy whole grain full of fiber and vitamins.

Ingredients

  • 1 Tbsp. olive oil
  • 1 tsp. finely chopped ginger
  • 3 cloves garlic, finely chopped
  • 1 finely diced onion
  • 3/4 cup whole barley
  • 1/2 cup finely diced carrots
  • 3 finely diced celery stalk
  • 5 chopped asparagus spears
  • 1 finely diced tomato
  • 2 cups chicken stock
  • 3 cups water
  • 1 tsp. dried thyme
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1/4 cup chopped green onion

Instructions

  1. Heat oil in a large pot on medium heat. Add ginger and garlic; sauté for 30 to 40 seconds, until fragrant.
  2. Add onion and sauté for 1 to 2 minutes. Add barley, carrots, celery, asparagus, tomato, chicken stock, water, thyme, salt and pepper and bring to a boil. Simmer on low heat for about 20 minutes or until barley is tender. Garnish with green onions.
