Zucchini Pasta with Avocado Pesto

Ingredients

  • 3 large zucchini, spiralized
  • 2 avocados
  • 1 cup fresh basil leaves
  • 3 cloves garlic, minced
  • 1/4 cup pine nuts
  • 2 Tbsp. lemon juice
  • 1/2 tsp. salt
  • 1/4 cup plus 1 Tbsp. olive oil
  • 1/4 tsp. freshly ground black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Spiralize your zucchini and set aside on paper towels.
  2. In a food processor, add avocados, basil, garlic, pine nuts, lemon juice and salt. Pulse until finely chopped. Slowly add 1/4 cup olive oil, until creamy.
  3. Drizzle remaining olive oil in a large skillet over medium-high heat, then add zucchini noodles, cooking for about 1 to 2 minutes until tender. Add zucchini noodles to a large bowl and toss with avocado pesto. Top with pepper and cheese.
