Turkey Sausage Sandwiches

Ingredients

  • 1 Tbsp. plus 1 tsp. vegetable oil, divided
  • 2 cloves garlic, minced
  • 2 onions, sliced 1/4-inch thick
  • 2 red bell peppers, ribs and seeds removed, sliced 1/4-inch thick
  • 1 green bell pepper, ribs and seeds removed, sliced 1/4-inch thick
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 3/4 cup water
  • 1 lb. spicy or sweet Italian turkey sausage
  • 4 hoagie rolls
  • Grainy mustard and shredded Italian cheese for serving

Instructions

  1. In a large skillet, heat 1 tablespoon oil over medium-high heat. Add garlic, onions and peppers; cook for about 7 minutes, stirring occasionally. Season with salt and pepper. Add water, cover and simmer for 3 minutes.
  2. Uncover and cook for about 2 minutes, stirring occasionally, until vegetables are soft and liquid has evaporated. Meanwhile, heat 1 teaspoon oil in a small skillet over medium heat. Add sausage and cook, turning occasionally, until browned and cooked through, 10 to 12 minutes. Place sausage and vegetables on bread and top with mustard and cheese.
