Brown Sugar Pork Loin
This recipe has less than 10 ingredients and roasted all on one baking sheet! Brown Sugar Pork Loin is served with carrots and potatoes.
Ingredients
- 2 lbs. pork loin
- 1/4 cup plus 1 Tbsp. canola oil, divided
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 2 lbs. carrots, peeled and sliced
- 2 lbs. potatoes, scrubbed and cut into 1-inch pieces
- 4 Tbsp. brown sugar
- 4 cloves garlic, minced
Instructions
- Preheat oven to 375º.
- Mix 1/4 cup canola oil, salt, pepper, carrots and potatoes. Place mixture on a rimmed baking sheet lined with foil. Spread vegetables around edges, leaving a hole in the middle. Mix remaining canola oil, brown sugar and garlic together; rub over pork loin. Add pork to the middle of the baking sheet. Roast pork and vegetables for about 40 to 50 minutes.
- Remove pork onto a plate to let rest, cover with foil. Let pork rest for 5 to 10 minutes. Remove vegetables from oven and serve with pork.
