Spinach and Blue Cheese Stuffed Chicken

Spinach and Blue Cheese Stuffed Chicken is an elegant dinner idea for guests or family. Serve with mashed potatoes and salad.

Ingredients

  • 4 skinless boneless chicken breasts, pounded to 1/2-inch
  • 1 (10 oz.) package frozen chopped spinach, thawed and squeezed dry
  • 1/2 tsp. freshly ground black pepper
  • 1 cup crumbled blue cheese
  • 8 slices bacon, cooked and crumbled
  • 2 Tbsp. flour
  • 1/4 tsp. salt
  • 1/8 tsp. freshly ground black pepper

Instructions

  1. Preheat oven to 350º.
  2. In a medium bowl, stir together spinach, pepper and blue cheese. Add in bacon and stir to combine.
  3. Distribute spinach mixture evenly onto the center of each chicken breast. Fold chicken over the filling, and secure with toothpicks. On a plate stir together flour, salt and pepper. Roll chicken in flour to coat.
  4. Place chicken on a lightly greased baking dish. Cover chicken with aluminum foil. Bake for 30 to 40 minutes.
