Spinach and Blue Cheese Stuffed Chicken
Spinach and Blue Cheese Stuffed Chicken is an elegant dinner idea for guests or family. Serve with mashed potatoes and salad.
Ingredients
- 4 skinless boneless chicken breasts, pounded to 1/2-inch
- 1 (10 oz.) package frozen chopped spinach, thawed and squeezed dry
- 1/2 tsp. freshly ground black pepper
- 1 cup crumbled blue cheese
- 8 slices bacon, cooked and crumbled
- 2 Tbsp. flour
- 1/4 tsp. salt
- 1/8 tsp. freshly ground black pepper
Instructions
- Preheat oven to 350º.
- In a medium bowl, stir together spinach, pepper and blue cheese. Add in bacon and stir to combine.
- Distribute spinach mixture evenly onto the center of each chicken breast. Fold chicken over the filling, and secure with toothpicks. On a plate stir together flour, salt and pepper. Roll chicken in flour to coat.
- Place chicken on a lightly greased baking dish. Cover chicken with aluminum foil. Bake for 30 to 40 minutes.
