Apple and Peanut Butter Snack Bites

These Apple and Peanut Butter Snack Bites are a perfect pick-me-up that will give you long-lasting energy! Fuel your body between meals or in the morning before the day begins!

Ingredients

  • 1/2 cup peanut butter
  • 2 Tbsp. ground flax seed
  • 1/4 cup dried cranberries
  • 1 cup quick-cooking oats
  • 1/2 apple, chopped
  • 2 tsp. honey
  • 1/8 tsp. salt

Instructions

  1. Place peanut butter, flax seed, cranberries, oats, apple, honey and salt in a food processor and pulse until they come together to form a dough-like texture. If mixture is crumbly, add 1 to 2 tablespoons water and pulse until it comes together.
  2. Scoop mixture into 1-inch balls. Place in an air-tight container with parchment paper between each layer. Store in refrigerator up to one week.
