Jim's Fruit Filled Meatloaf

Ingredients

  • 1/2 cup unseasoned bread crumbs
  • 1/2 cup corn flakes
  • 1/3 cup whole milk
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 celery stalk, finely chopped
  • 2 Tbsp. butter
  • 2 Tbsp. Worcestershire sauce
  • 1 Tbsp. cider vinegar
  • 1/4 tsp. allspice
  • 2 tsp. salt
  • 1 tsp. freshly ground black pepper
  • 1 1/2 cups mixed dried fruit and cranberries
  • 2 eggs, beaten
  • 1 1/2 lbs. lean ground beef
  • 1/2 lb. ground pork
  • 1/4 cup brown sugar

Instructions

  1. Preheat oven to 350º.
  2. In a large bowl soak bread crumbs and corn flakes in milk. Meanwhile, cook onion, garlic and celery in butter in a large skillet over medium heat, stirring occasionally for 5 minutes. Remove from heat and stir in Worcestershire sauce, vinegar, allspice, salt and pepper. Add to bread crumb mixture. Add fruit and cranberries to mixture along with eggs, beef and pork. Mix together until well combined.
  3. Place meat in a 9 x 13-inch baking dish and form meat into a 9 x 5-inch loaf. Sprinkle brown sugar over the top and sides of the meatloaf. Bake covered with foil for one hour or until internal temperature is 160º. Let stand for 10 minutes prior to serving.
