Turkey Meatloaf

Turkey Meatloaf

You would never guess this Turkey Meatloaf is packed with mushrooms, but that’s what makes it so good!

Ingredients

  • 1 1/4 lbs. ground turkey
  • 1 Tbsp. olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (8 oz.) carton mushrooms, finely chopped
  • 1 tsp. salt, divided
  • 1/2 tsp. freshly ground black pepper, divided
  • 1 1/2 Tbsp. Worcestershire sauce
  • 1/2 cup ketchup, divided
  • 1 cup seasoned Panko bread crumbs
  • 1/3 cup milk
  • 2 eggs, lightly beaten

Instructions

  1. Preheat oven to 400°.
  2. Heat oil in a large skillet over medium-low heat. Add onion and cook until softened. Add garlic and cook for 1 minute. Stir in mushrooms, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook for 10 minutes.
  3. Transfer mixture into a large bowl and stir in Worcestershire sauce and 3 tablespoons ketchup. Set aside.
  4. Combine bread crumbs, milk and eggs in bowl. Add egg mixture to mushroom mixture. Using your hands, gently mix in ground turkey and remaining salt and pepper.
  5. Lightly grease a 9 x 13-inch baking pan. Form meatloaf into an oval and place in the baking pan. Spread remaining ketchup on top. Bake for about 50 minutes. Let stand for 5 minutes before serving.
