Southwest Meatloaf

Southwest Meatloaf

We are starting the week with a little kick. Southwest meatloaf is filled with hot sauce, smoked paprika, onion and peppers!

Ingredients

  • 1 Tbsp. olive oil
  • 2 cloves garlic, minced
  • 1 green pepper, chopped
  • 1 red pepper, chopped
  • 1 red onion, chopped
  • 1 1/2 lbs. ground beef
  • 1 egg, whisked
  • 3/4 cup almond flour or breadcrumbs
  • 2 Tbsp. hot sauce
  • 1 Tbsp. chili powder
  • 1 tsp. smoked paprika
  • 1 tsp. cumin
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper

Instructions

  1. Preheat oven to 400º.
  2. Heat a large skillet over medium-high heat and add olive oil and garlic. Once garlic becomes fragrant, add peppers and onions. Cook until onions are translucent then remove from heat.
  3. In a large bowl, mix together beef, egg, flour or breadcrumbs, hot sauce, chili powder, paprika, cumin, salt and pepper. Add cooked veggies and mix to combine.
  4. Place meat mixture in two bread loaf pans. Bake for 30 to 35 minutes.
