Ingredients

  • 2 (6 oz.) skinless salmon filets
  • 2 Tbsp. vegetable oil
  • 1/2 tsp. salt
  • 1 cup fresh chopped cranberries
  • 1/2 cup pomegranate seeds, optional
  • 1/4 cup diced onion
  • 1/3 cup freshly chopped cilantro
  • 1 jalapeño, seeded and diced
  • 2 Tbsp. lime juice

Instructions

  1. In a skillet heat vegetable oil over medium-high heat. Sprinkle salmon with salt. Cook for about 3 minutes on each side, until crispy and just cooked through in the center.
  2. Meanwhile, combine cranberries, pomegranate seeds, onion, cilantro, jalapeño and lime juice in a medium bowl. Season with salt and pepper. Spoon salsa over cooked salmon.
