Gia Russa Cioppino
Gia Russa is whipping up something different this week. Try Cioppino, this fish stew is a lighter alternative to heavy holiday meals!
Ingredients
- 5 Tbsp. Gia Russa Extra Virgin Olive
- Oil, divided
- 3 oz. sea bass, cubed
- 2 oz. baby shrimp
- 4 oz. mussels
- 4 oz. clams
- 2 oz. clam meat
- 2 oz. lobster meat
- 1/4 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1 jar Mario Batali Cioppino
- 1/2 cup vegetable stock, optional
- 3 Tbsp. freshly chopped Italian parsley
- 1 baguette loaf, sliced
Instructions
- Drizzle 2 tablespoons olive oil in a large pot, heat until hot. Add sea bass and cook for 2 minutes, add shrimp, mussels, clams, clam meat and lobster meat. Toss for about 2 to 3 minutes. Season with salt and pepper. Add Cioppino and vegetable stock. Bring to boil, then lower heat and simmer for 20 minutes.
- Before serving, drizzle with remaining oil and garnish with parsley. Serve with baguettes.
