Turkey Meatloaf
You would never guess this Turkey Meatloaf is packed with mushrooms, but that’s what makes it so good!
Ingredients
- 1 1/4 lbs. ground turkey
- 1 Tbsp. olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 (8 oz.) carton mushrooms, finely chopped
- 1 tsp. salt, divided
- 1/2 tsp. freshly ground black pepper, divided
- 1 1/2 Tbsp. Worcestershire sauce
- 1/2 cup ketchup, divided
- 1 cup seasoned Panko bread crumbs
- 1/3 cup milk
- 2 eggs, lightly beaten
Instructions
- Preheat oven to 400°.
- Heat oil in a large skillet over medium-low heat. Add onion and cook until softened. Add garlic and cook for 1 minute. Stir in mushrooms, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook for 10 minutes.
- Transfer mixture into a large bowl and stir in Worcestershire sauce and 3 tablespoons ketchup. Set aside.
- Combine bread crumbs, milk and eggs in bowl. Add egg mixture to mushroom mixture. Using your hands, gently mix in ground turkey and remaining salt and pepper.
- Lightly grease a 9 x 13-inch baking pan. Form meatloaf into an oval and place in the baking pan. Spread remaining ketchup on top. Bake for about 50 minutes. Let stand for 5 minutes before serving.
