Thanksgiving Leftover Stuffed Shells

Wondering what to do with your Thanksgiving leftovers? Mix them together and make stuffed shells!

To make this hearty and satisfying dish, you’ll need 24 large pasta shells, cooked according to the package directions, 1 tablespoon of olive oil, ¼ cup of diced onion, ¼ cup of diced celery, 1 cup of diced turkey, 1 cup of prepared mashed potatoes, 1 cup of cooked stuffing, ¼ teaspoon of salt, ¼ teaspoon freshly ground black pepper, 1 cup of shredded Italian blend cheese, divided and 2 cups turkey gravy.

Start by preheating your oven to 350º. In a small skillet, sauté the onions and celery in olive oil until soft; transfer to a large mixing bowl. Add the turkey, stuffing, mashed potatoes, salt, pepper and half of the cheese.

Spread about ¼ cup of the gravy into the bottom of a 9×13-inch baking dish. Fill each shell with the stuffing mixture and place them into the bottom of the baking dish. Top with the remainder of the shredded cheese and gravy. Bake for 30 minutes or until heated through and serve.
