Salmon Cakes with Aioli

These hearty Salmon Cakes with Aioli are loaded with fresh ingredients including parsley, onion, lemon juice and salmon!

Ingredients

  • 2 lbs. fresh salmon fillets
  • 1 tsp. salt, divided
  • 1/2 tsp. freshly ground black pepper, divided
  • 1 onion, diced and sautéed
  • 2/3 cup seasoned breadcrumbs
  • 1/2 cup chopped fresh parsley
  • 1 cup mayonnaise, divided
  • 1/4 cup Dijon mustard
  • 1 egg, lightly beaten
  • 5 Tbsp. lemon juice, divided
  • 1 1/2 Tbsp. sriracha
  • 1 clove garlic, minced

Instructions

  1. Preheat oven to 400º.
  2. Rinse salmon and pat dry, place on a parchment-lined baking sheet and season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Bake until cooked through, about 15 minutes. Allow salmon to cool then flake with a fork into small pieces.
  3. Place salmon in a large bowl. Add onions, bread crumbs, parsley, 1/2 cup mayonnaise, mustard, egg and 4 tablespoons lemon juice. Form mixture into balls and place on a parchment-lined baking sheet. Bake for 20 minutes, until crisp and golden.
  4. Meanwhile, combine remaining 1/2 cup mayonnaise, 1/2 teaspoon salt, 1/4 teaspoon pepper,
  5. tablespoon lemon juice, sriracha and garlic in a small bowl. Serve with salmon cakes.
