Bruschetta Lentil Dip
Bruschetta Lentil Dip is easy and healthy! Fresh flavors fill this dish, serve with toasted baguettes, pita or your favorite crackers.
Ingredients
- 8 oz. uncooked lentils, rinsed and drained
- 6 Roma tomatoes, diced
- 8 fresh basil leaves, chopped
- 3 cloves garlic, minced
- 1 1/2 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 1 Tbsp. balsamic vinegar
- 2 Tbsp. olive oil
- 1 tsp. lemon juice
- 1/2 tsp. dried oregano
- 1 1/2 cups crumbled Feta cheese
- Pita or crackers for dipping
Instructions
- Bring a large pot of water to a boil and add lentils. Boil, covered, until tender, about 20 to 25 minutes. Drain and cool, then refrigerate until chilled.
- Add tomatoes, basil and garlic to a bowl. Add salt, pepper, balsamic vinegar, olive oil, lemon juice and oregano. Stir until combined. Add lentils and cheese. Refrigerate for one hour. Serve with pita or crackers.
