Bruschetta Lentil Dip

Bruschetta Lentil Dip is easy and healthy! Fresh flavors fill this dish, serve with toasted baguettes, pita or your favorite crackers.

Ingredients

  • 8 oz. uncooked lentils, rinsed and drained
  • 6 Roma tomatoes, diced
  • 8 fresh basil leaves, chopped
  • 3 cloves garlic, minced
  • 1 1/2 tsp. salt
  • 1/2 tsp. freshly ground black pepper
  • 1 Tbsp. balsamic vinegar
  • 2 Tbsp. olive oil
  • 1 tsp. lemon juice
  • 1/2 tsp. dried oregano
  • 1 1/2 cups crumbled Feta cheese
  • Pita or crackers for dipping

Instructions

  1. Bring a large pot of water to a boil and add lentils. Boil, covered, until tender, about 20 to 25 minutes. Drain and cool, then refrigerate until chilled.
  2. Add tomatoes, basil and garlic to a bowl. Add salt, pepper, balsamic vinegar, olive oil, lemon juice and oregano. Stir until combined. Add lentils and cheese. Refrigerate for one hour. Serve with pita or crackers.
