Chicken Alfredo Zucchini Noodles
Chicken Alfredo Zucchini Noodles are a healthy alternative to regular pasta.
Ingredients
- 2 Tbsp. butter
- 1 lb. chicken, cut into 1-inch pieces
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 3 Tbsp. flour
- 1/2 cup half-and-half
- 1 cup milk
- 1/2 cup grated Parmesan cheese, divided
- 1/4 cup prepared pesto sauce
- 1 tsp. salt
- 1 tsp. freshly ground black pepper
- 4 zucchini, spiralized
Instructions
- In large skillet over medium-high heat, melt butter. Add chicken, onion and garlic. Sauté several minutes until chicken is cooked through and onions are translucent. Stir in flour. Then slowly mix in half-and-half, milk, 1/4 cup cheese and pesto until smooth.
- Bring sauce to a simmer until thickened. Remove from heat and season with salt and pepper.
- Add zucchini to skillet and gently toss noodles until coated in sauce. Sprinkle remaining Parmesan cheese over mixture, return to heat and let cook for 5 minutes.
