Honey Orange Chicken and Rice
Honey Orange Chicken and Rice is an easy go-to meal for busy nights and weekends. Most of these ingredients will already be in your pantry.
Ingredients
- 2 1/2 cups orange juice, divided
- 1/4 cup honey
- 1/4 cup soy sauce
- 1/4 tsp. ground cinnamon
- 1 tsp. ground ginger
- 1/2 tsp. garlic powder
- 4 boneless, skinless chicken breasts
- 2/3 cup diced celery
- 2 Tbsp. butter, cubed
- 1 cup uncooked rice
- 3/4 cup water
- 2 Tbsp. grated orange zest
- 2 Tbsp. dried minced onion
- 1 tsp. salt
- 1/8 tsp. dried thyme
Instructions
- In a small bowl, combine 1 cup orange juice, honey, soy sauce, cinnamon, ginger and garlic powder. Pour 1/2 cup marinade into a large resealable plastic bag and add chicken. Seal bag and turn to coat; refrigerate for 2 hours.
- In a saucepan, sauté celery in butter until tender. Add 1 1/2 cups orange juice, rice, water, orange zest, onion, salt and thyme. Mix well and bring to a boil. Reduce heat; cover and simmer for 20 minutes or until the rice is tender.
- Grill chicken, covered, over medium heat for 5 to 7 minutes on each side or until cooked through. Baste with reserved marinade. Serve chicken with rice.
