Vodka Shrimp Pasta
At this point in the summer, gardens are thriving with fresh ingredients. And you can take advantage of the season with this week’s recipes. Use fresh basil in our recipe for Vodka Shrimp Pasta.
Ingredients
- 8 oz. fettuccine pasta
- 1 Tbsp. olive oil, divided
- 1 lb. large shrimp, peeled and deveined
- 3 cloves minced garlic
- 1/3 cup vodka
- 1 1/3 cups marinara sauce
- 1/3 cup chopped fresh basil, divided
- 1/4 cup heavy whipping cream
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1/2 tsp. red pepper flakes
Instructions
- Cook pasta according to package directions.
- Heat 1/2 tablespoon oil in a large skillet. Add shrimp and cook for 4 minutes. Remove shrimp from pan.
- Add 1/2 tablespoon oil and garlic to pan. Cook for 1 minute. Add vodka and cook for another minute. Add marinara, 1/4 cup basil, cream, salt, pepper and red pepper flakes. Bring sauce to a simmer.
- Stir in pasta and shrimp. Top with remaining basil and serve.
