Garden Pasta Salad
Garden Pasta Salad is full of fresh veggies. Bring this side dish to your next family gathering!
Ingredients
- 2 cups baby grape tomatoes, halved
- 2 zucchini, thinly sliced
- 1 red pepper, thinly sliced
- 1 cup corn
- 1 cup peaches, diced
- 1/2 cup green onions, thinly sliced
- 1/2 cup grated Parmesan cheese
- 1/2 cup olive oil
- 2 tsp. lemon zest
- 3 Tbsp. fresh lemon juice
- 1 Tbsp. white balsamic vinegar
- 2 cloves garlic, minced
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 1/4 cup freshly chopped basil
- 8 oz. penne pasta, cooked and drained
- 2 cups shredded chicken
Instructions
- In a large bowl, toss together vegetables. In a separate bowl combine cheese, olive oil, lemon zest, lemon juice, balsamic vinegar, garlic, salt, pepper and basil.
- Add pasta and chicken to the vegetable mixture. Pour Parmesan vinaigrette over pasta salad and serve.
