Garden Pasta Salad

Garden Pasta Salad is full of fresh veggies. Bring this side dish to your next family gathering!

Ingredients

  • 2 cups baby grape tomatoes, halved
  • 2 zucchini, thinly sliced
  • 1 red pepper, thinly sliced
  • 1 cup corn
  • 1 cup peaches, diced
  • 1/2 cup green onions, thinly sliced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup olive oil
  • 2 tsp. lemon zest
  • 3 Tbsp. fresh lemon juice
  • 1 Tbsp. white balsamic vinegar
  • 2 cloves garlic, minced
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1/4 cup freshly chopped basil
  • 8 oz. penne pasta, cooked and drained
  • 2 cups shredded chicken

Instructions

  1. In a large bowl, toss together vegetables. In a separate bowl combine cheese, olive oil, lemon zest, lemon juice, balsamic vinegar, garlic, salt, pepper and basil.
  2. Add pasta and chicken to the vegetable mixture. Pour Parmesan vinaigrette over pasta salad and serve.
