Pesto Ravioli & Chicken

Ingredients

  • 2 tsp. olive oil
  • 1 lb. boneless skinless chicken breast, cut into strips
  • 1/2 tsp. seasoned salt
  • 1/4 tsp. freshly ground black pepper
  • 3/4 cup chicken broth
  • 1 (9 oz.) package cheese ravioli
  • 3 zucchini, sliced
  • 1/2 tsp. red pepper flakes
  • 2 cloves garlic, minced
  • 1/4 cup basil pesto
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large skillet, heat oil over medium-high heat. Season chicken with salt and pepper. Add chicken and cook until brown. Remove from skillet and set aside.
  2. Add broth and ravioli. Bring to boil and then lower heat. Cover and simmer until ravioli is tender.
  3. Turn heat to medium-high and add zucchini, red pepper flakes and chicken. Cook for about 3 minutes before adding garlic. Cook for an additional minute.
  4. Add pesto and stir to coat. Sprinkle with Parmesan and serve.
