Roasted Red Pepper Hummus

Ingredients

  • 1/4 cup tahini
  • 1/4 cup lemon juice
  • 2 Tbsp. olive oil
  • 1 garlic clove, minced
  • 1/2 tsp. cumin
  • 1/2 tsp. hot sauce
  • 1/2 tsp. salt
  • 1 (15 oz.) can chickpeas, drained
  • 1 can roasted red peppers, chopped and divided
  • Crackers or vegetables, for serving

Instructions

  1. In a food processor, add tahini and lemon juice. Process for 1 minute, scrape the sides of the bowl, then process for 30 seconds more.
  2. Add olive oil, garlic, cumin, hot sauce and salt. Process for 30 seconds, scrape the sides of the bowl, then process for another 30 seconds.
  3. Add half of the chickpeas and process for 1 minute. Add remaining chickpeas and process until smooth. Add 3/4 cup peppers and process until smooth. Transfer hummus to a serving bowl, garnish with remaining peppers and serve with crackers or vegetables.
