Cinnamon Bun Cookies

Ingredients
- 1 stick butter, softened
- 1/2 cup sugar
- 1 cup brown sugar, divided
- 1 egg
- 1 1/2 tsp. vanilla
- 1 1/2 cups flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/3 cup chopped pecans
- 1 tsp. cinnamon
- 1/8 tsp. nutmeg
- 3 Tbsp. honey
Instructions
- Preheat oven to 350°.
- In a large bowl, beat butter, sugar and 1/4 cup brown sugar until smooth. Beat in egg and vanilla.
- In a separate bowl, mix flour, baking powder and salt. Add dry mixture to butter mixture until dough is formed. Wrap in plastic and refrigerate for 1 hour.
- Roll the dough into a 10 to 12 inch square on a lightly-floured surface. Sprinkle with remaining 3/4 cup brown sugar, pecans, cinnamon and nutmeg. Drizzle with honey and roll, jelly roll-style.
- Slice dough into 1/4-inch thick rounds and place on a baking sheet lined with parchment paper. Bake for 10 to 12 minutes, let cool and serve.
