Butterscotch Cookies

Butterscotch Cookies

Butterscotch Cookies are soft in the middle and crispy around the edges. Such a simple cookie, but so delicious!

Ingredients

  • 1 stick butter, softened
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 1/2 tsp. vanilla extract
  • 2 eggs
  • 2 1/2 cups flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 tsp. ground cinnamon
  • 1 (11 oz.) bag butterscotch chips

Instructions

  1. In a large bowl, cream together butter, sugars and vanilla extract until fluffy. Add eggs and mix until well combined.
  2. In a medium bowl, whisk together flour, baking soda, salt and cinnamon. Add dry ingredients to
  3. wet ingredients. Cover bowl with plastic wrap and refrigerate for 30 minutes.
  4. Preheat oven to 350°.
  5. Line a large baking sheet with parchment paper and scoop one tablespoon of dough at a time onto the baking sheet. Bake cookies for 10 to 12 minutes.
