Gingerbread Cookie Sandwiches
It’s National Cookie Day! Celebrate and make Gingerbread Cookie Sandwiches. They’re delicious and full of festive flavor.
Ingredients
- Gingerbread Cookies
- 1 cup molasses
- 1/2 cup shortening
- 2 1/2 cups flour
- 1 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. ground ginger
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 1/2 cup brown sugar
- Vanilla Buttercream
- 3 cups powdered sugar
- 2 sticks butter, softened
- 1/2 tsp. vanilla
- 2 Tbsp. heavy cream
Instructions
- Gingerbread Cookies
- In a small pan over medium-high heat, combine molasses and shortening and bring to a boil. Remove from heat and let cool for 15 to 20 minutes.
- In a large bowl, combine flour, baking soda, salt, ginger, cinnamon, nutmeg and brown sugar. Add molasses mixture to dry mixture and stir until combined. Wrap dough in plastic wrap and refrigerate at least 2 hours.
- Preheat oven to 375°. Scoop 1 1/2 tablespoons of dough onto baking sheets lined with parchment paper. Bake 8 minutes, then cool completely.
- Vanilla Buttercream
- In a medium bowl, mix powdered sugar and butter until smooth. Stir in vanilla and heavy cream. Spread buttercream on half of the cooled cookies, then top with remaining half of cookies
