Chicken & Mushroom Tortellini Casserole

Ingredients
- 2 (16 oz.) packages cheese tortellini
- 8 oz. fresh green beans, halved
- 2 Tbsp. olive oil
- 8 oz. mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 cups shredded, cooked chicken
- 1 (12 oz.) jar roasted red peppers
- 3/4 cup pesto
- 1/2 tsp. red pepper flakes
- 1/2 cup shredded Mozzarella cheese
- 1/2 cup shredded fresh basil
Instructions
- Preheat oven to 350°.
- Cook tortellini according to package directions, adding green beans for the last 4 minutes. Drain and transfer to large bowl.
- Add oil to a large skillet over medium heat. Add mushrooms, onion. Cook for 6 to 8 minutes, until tender. Add garlic and cook for an additional minute. Transfer to bowl with tortellini. Add chicken to bowl.
- Place undrained peppers in a blender and blend until smooth. Stir in pesto and red pepper flakes. Add sauce to pasta mixture and stir to coat.
- Transfer mixture to a baking dish and cover with foil. Bake for 20 minutes. Uncover and sprinkle with cheese. Bake, uncovered, for 5 minutes, until cheese is melted. Top with basil and serve.
