Spicy Shrimp Soup

For your next meal, spice things up and make Spicy Shrimp Soup. Full of flavor, this soup will definitely keep you warm during the wintry weather.

Ingredients

  • 1/4 cup olive oil
  • 4 shallots, chopped
  • 1 carrot, chopped
  • 1 hot chili, sliced or 1 tsp. red pepper flakes
  • 4 cloves garlic, minced
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1 (15.5 oz.) can diced tomatoes
  • 8 cups low-sodium chicken broth
  • 1 cup farro or barley
  • 1 lb. medium raw shrimp, peeled and deveined
  • 5 oz. torn escarole
  • Fresh basil and bread, for serving

Instructions

  1. Heat oil in a large saucepan over medium-high heat. Add shallots, carrot, chili, garlic, salt and pepper. Stir and cook until vegetables are tender, about 6 to 8 minutes.
  2. Add tomatoes with juice and chicken broth. Bring to boil. Add farro and cook until tender, 20 to 25 minutes.
  3. Stir in shrimp and escarole. Cook until shrimp are opaque, about 2 to 4 minutes. Transfer the soup to bowls and sprinkle with basil. Serve with bread.
