Jambalaya

Ingredients

  • 2 Tbsp. olive oil, divided
  • 2 red bell peppers, chopped
  • 3 ribs celery, diced
  • 1 jalapeño, seeded and chopped
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 (14 oz.) can crushed tomatoes
  • 3 1/2 cups chicken stock
  • 1 1/2 cups long grain white rice
  • 2 Tbsp. Cajun seasoning
  • 1 tsp. dried thyme
  • 1/4 tsp. cayenne pepper
  • 1 bay leaf
  • 1 lb. raw large shrimp, peeled and de-veined
  • 2 boneless, skinless chicken breasts, cut into 1-inch pieces, cooked
  • 1 lb. Andouille or smoked sausage, sliced into rounds, cooked

Instructions

  1. Heat oil in a large pot over medium-high heat. Add peppers, celery, jalapeño, onion and garlic and cook for about 6 minutes.
  2. Add tomatoes, chicken stock, rice, Cajun seasoning, thyme, cayenne and bay leaf and stir to combine. Bring mixture to simmer, then reduce heat to medium-low. Cover and simmer for about 25 to 30 minutes, stirring occasionally, until rice is nearly cooked through.
  3. Add shrimp, chicken and sausage and simmer until shrimp is cooked through. Discard the bay leaf. Season with salt and pepper, if needed, and serve.
