Loaded Cauliflower Mash

In need of a lighter side dish for dinner? Make Loaded Cauliflower Mash. It’s full of loaded baked potato toppings, without the calories.

Ingredients

  • 1 cauliflower, cut into pieces
  • 2 Tbsp. water
  • 3 Tbsp. butter
  • 1/4 tsp. garlic powder
  • 4 oz. sour cream
  • 1/4 cup chopped chives, divided
  • 1 cup shredded Cheddar cheese, divided
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 4 slices bacon, cooked and crumbled

Instructions

  1. Turn on your oven broiler.
  2. In a microwave-safe bowl, add cauliflower and water. Cover and steam until tender, about 5 to 8 minutes. Drain water, then add to a food processor. Blend until fluffy, then transfer to a baking dish.
  3. Add butter, 2 tablespoons chives, 1/2 cup cheese, salt and pepper. Stir until combined. Top with remaining 2 tablespoon chives, remaining 1/2 cup cheese and bacon. Place under broiler until cheese is bubbly.
