Loaded Cauliflower Mash
In need of a lighter side dish for dinner? Make Loaded Cauliflower Mash. It’s full of loaded baked potato toppings, without the calories.
Ingredients
- 1 cauliflower, cut into pieces
- 2 Tbsp. water
- 3 Tbsp. butter
- 1/4 tsp. garlic powder
- 4 oz. sour cream
- 1/4 cup chopped chives, divided
- 1 cup shredded Cheddar cheese, divided
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 4 slices bacon, cooked and crumbled
Instructions
- Turn on your oven broiler.
- In a microwave-safe bowl, add cauliflower and water. Cover and steam until tender, about 5 to 8 minutes. Drain water, then add to a food processor. Blend until fluffy, then transfer to a baking dish.
- Add butter, 2 tablespoons chives, 1/2 cup cheese, salt and pepper. Stir until combined. Top with remaining 2 tablespoon chives, remaining 1/2 cup cheese and bacon. Place under broiler until cheese is bubbly.
