Peanut Butter Pie Bites

Ingredients
- 3/4 cup graham cracker crumbs
- 4 Tbsp. butter, melted
- 1/8 tsp. salt
- 1 (8 oz.) package cream cheese, softened
- 2/3 cup peanut butter, divided
- 2 Tbsp. powdered sugar
- 1 1/2 tsp. vanilla
- 4 oz. whipped topping, thawed
- Chocolate syrup, for serving
Instructions
- In a medium bowl, combine graham cracker crumbs, butter and salt. Press about 1 teaspoon of crumb mixture in the bottoms of a lined 24-count mini muffin tin. Refrigerate for about 20 minutes.
- In a large bowl, beat cream cheese until fluffy. Add 1/3 cup peanut butter, powdered sugar and vanilla. Beat until smooth. With a spatula, fold in whipped topping until just combined.
- Remove crusts from refrigerator. Spoon the remaining 1/3 cup peanut butter evenly among crusts. Spoon peanut butter mixture on top of each crust, then drizzle each with chocolate syrup. Refrigerate for 4 hours, or until set.
