Pork Bok Choy Stir Fry

For dinner, try something new and make Pork Bok Choy Stir Fry.

Ingredients

  • 1 lb. boneless pork shoulder or pork loin, thinly sliced
  • 1 1/2 tsp. cornstarch
  • 1/2 tsp. red pepper flakes
  • 1/4 tsp. salt
  • 3 Tbsp. soy sauce, divided
  • 2 Tbsp. rice vinegar
  • 2 Tbsp. Chinese rice wine or dry sherry
  • 1 Tbsp. vegetable oil
  • 1/2 cup chopped green onions
  • 1 (2-inch) piece ginger, peeled and chopped
  • 2 large heads bok choy, cut into 2-inch pieces
  • Chopped cashews, sesame seeds and white rice, for serving

Instructions

  1. In a medium bowl, toss pork, cornstarch, red pepper flakes, salt and 1 tablespoon soy sauce.
  2. In a small bowl, stir vinegar, wine and remaining 2 tablespoons soy sauce.
  3. Heat oil in a large skillet over high heat. Add pork mixture and cook first side for about 1 minute. Toss and continue to cook until done.
  4. Add wine mixture and bok choy to pan. Toss until sauce thickens and all ingredients are coated. Remove from heat.
  5. Top with cashews and sesame seeds and serve over rice, if desired.
