Shrimp Taco Bowls

Shrimp Taco Bowls

In need of a light dinner recipe? Make Shrimp Taco Bowls, complete with fresh veggies, lime and cilantro.

Ingredients

  • 1 lb. raw shrimp, peeled and deveined
  • 2 Tbsp. taco seasoning
  • 1 Tbsp. olive oil
  • 1 cup cooked rice
  • 1 avocado, peeled, pitted and sliced
  • 1 cup chopped tomato
  • 1/2 cup black beans, rinsed
  • 1/2 cup corn, drained
  • 1/4 cup chopped green onion
  • 1 lime, cut into wedges
  • Sour cream and cilantro, for serving

Instructions

  1. Season shrimp with taco seasoning. Heat oil in a large pan over high heat. Add shrimp and cook each side for 2 to 3 minutes.
  2. Divide rice evenly among four bowls. Top with shrimp. Add avocado, tomato, beans, corn and onion to each bowl. Squeeze lime overtop each bowl. Drizzle with sour cream, top with cilantro and serve.
