French Onion Chicken
For your next dinner, make French Onion Chicken. This recipe is filled with all the iconic flavors of French onion soup.
Ingredients
- 3 Tbsp. olive oil, divided
- 1 onion, thinly sliced
- 1 tsp. salt, divided
- 1 tsp. freshly ground black pepper, divided
- 2 tsp. chopped fresh thyme
- 2 cloves garlic, minced
- 2 lbs. boneless skinless chicken breast, cut into 1-inch pieces
- 1/2 tsp. Italian seasoning
- 2 Tbsp. flour
- 1 1/2 cups beef broth
- 1 cup shredded Gruyere cheese
Instructions
- Heat 2 tablespoons oil in a large skillet over medium-low heat. Add onions, 1/2 teaspoon salt and 1/2 teaspoon pepper. Cook, stirring occasionally, until onions are caramelized, about 25 minutes. Add garlic and thyme and cook for an additional minute. Transfer onions to a plate.
- In a large bowl, season chicken with remaining 1/2 teaspoon salt, pepper and Italian seasoning. Add flour and toss. Heat remaining tablespoon of oil in same skillet and cook chicken over medium-high heat for about 8 minutes. Add beef broth and onions to skillet. Bring to boil then reduce heat and simmer for about 10 minutes. Add cheese and cover. Heat until cheese melts, then serve.
