Hummus-Coated Chicken
For your next dinner, make Hummus-Coated Chicken (bonus hummus recipe included)!
Ingredients
- Hummus
- 1/4 cup tahini
- 1/4 cup lemon juice
- 1 clove garlic, minced
- 2 Tbsp. olive oil
- 1 tsp. hot sauce
- 1/2 tsp. cumin
- 1/2 tsp. salt
- 1 (15 oz.) can chickpeas, drained and rinsed
- 2 Tbsp. water, if needed
- Coated Chicken
- 1 lb. boneless skinless chicken breasts
- 1/2 tsp. seasoned salt
- 1/4 tsp. freshly ground black pepper
- 1 cup hummus
- Smoked paprika, for serving
Instructions
- Hummus
- In a food processor, add tahini and lemon juice, garlic, olive oil, hot sauce, cumin and salt. Process for 1 minute, scraping the sides down halfway through. Add chickpeas and process until smooth. Add water if needed.
- Coated Chicken
- Preheat oven to 350°.
- Pat chicken dry and season with salt and pepper. Spread a thin layer of hummus over the chicken and sprinkle with paprika. Place on a baking rack over a rimmed baking tray and cook about 30 minutes. Sprinkle with paprika.
