Beef Sliders with Pasta Salad

As the spring season gets into full gear, things only get busier. Megan’s making an easy dinner that you can make the morning or night before to make those times when running to and from practices or outdoor activities much easier. These beef sliders paired with pasta salad are something the whole family will love and it makes a ton, so you can enjoy leftovers the next day.

Beef Sliders

To make the sliders, you will need a beef chuck roast that weighs 4 pounds, 1 tsp. of salt, ½ tsp. of freshly ground black pepper and ½ tsp. of garlic powder. You’ll also need a jar of chili sauce (12 oz.), a can of cola (12 oz.), 3 Tbsp of dried minced onion, 1 Tbsp of Worcestershire sauce and 1 Tbsp of hot sauce. To serve, you’ll need slider buns and sliced dill pickles.

Season roast with salt, pepper and garlic powder. Place roast in a slow cooker and dd remaining ingredients to slow cooker. Cover and cook on low for 8 hours. Shred beef and serve on slider buns with pickles.

Pasta Salad

For the pasta salad, you will need a 1-pound box of medium shell pasta, cooked according to package directions, five hard-boiled eggs that have been peeled and chopped, 1 cup of chopped celery, 1/2 cup of chopped sweet onion, a 2 oz. jar of drained pimentos and 3/4 cup of chopped green pepper. For the dressing, you’ll need 1 1/2 cups of mayonnaise, 1/2 cup of sour cream, 1 Tbsp. of yellow mustard, 3 tsp. of apple cider vinegar, 3 Tbsp. of sweet pickle relish, 1/2 tsp. of paprika, 1/4 tsp. of freshly ground black pepper, 1/2 tsp. of celery salt and 1/4 tsp. of garlic powder.

In a large bowl mix pasta, eggs, onion, pimentos, celery and green pepper. In another bowl mix mayonnaise, sour cream, mustard, vinegar, relish, garlic powder, paprika, black pepper, celery sat and garlic powder. Pour the mayonnaise mixture over the pasta and mix well. Refrigerate for several hours or overnight.
