Jambalaya

Ingredients
- 2 Tbsp. olive oil, divided
- 2 red bell peppers, chopped
- 3 ribs celery, diced
- 1 jalapeño, seeded and chopped
- 1 onion, diced
- 4 cloves garlic, minced
- 1 (14 oz.) can crushed tomatoes
- 3 1/2 cups chicken stock
- 1 1/2 cups long grain white rice
- 2 Tbsp. Cajun seasoning
- 1 tsp. dried thyme
- 1/4 tsp. cayenne pepper
- 1 bay leaf
- 1 lb. raw large shrimp, peeled and de-veined
- 2 boneless, skinless chicken breasts, cut into 1-inch pieces, cooked
- 1 lb. Andouille or smoked sausage, sliced into rounds, cooked
Instructions
- Heat oil in a large pot over medium-high heat. Add peppers, celery, jalapeño, onion and garlic and cook for about 6 minutes.
- Add tomatoes, chicken stock, rice, Cajun seasoning, thyme, cayenne and bay leaf and stir to combine. Bring mixture to simmer, then reduce heat to medium-low. Cover and simmer for about 25 to 30 minutes, stirring occasionally, until rice is nearly cooked through.
- Add shrimp, chicken and sausage and simmer until shrimp is cooked through. Discard the bay leaf. Season with salt and pepper, if needed, and serve.
