Thai Peanut Chicken Slaw Salad

Ingredients
- 1/2 cup peanut butter
- 2 Tbsp. soy sauce
- 1/2 Tbsp. minced ginger
- 1 clove garlic, minced
- 2 Tbsp. rice vinegar
- 1/2 tsp. Sriracha sauce
- 1/2 tsp. maple syrup
- 1/3 cup water
- 4 cups coleslaw mix
- 1 cup shredded carrots
- 1/2 cup chopped green onion
- 1/2 cup chopped red bell pepper
- 1 seedless cucumber, chopped
- 1/3 cup chopped cilantro
- 1 1/2 cups shredded chicken
- 1/2 cup chopped peanuts
Instructions
- In a small bowl, whisk together peanut butter, soy sauce, ginger, garlic, rice vinegar, Sriracha and maple syrup. Slowly whisk in water until desired consistency is reached. Set aside.
- In a large bowl, toss together coleslaw mix, carrots, green onion, bell pepper, cucumber, cilantro and chicken. Pour peanut sauce overtop and toss to coat. Top with chopped peanuts and serve.
