Cabbage Salad

Perfect for your Labor Day gathering this weekend! It’s healthy, colorful and full of flavor.

Ingredients

  • 1/4 cup red wine vinegar
  • 1 Tbsp. toasted sesame oil
  • 2 Tbsp. plain Greek yogurt
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground black pepper
  • 1/4 tsp. garlic powder
  • 2 cups red cabbage, shredded
  • 2 cups green cabbage, shredded
  • 1/2 red bell pepper, chopped
  • 1/2 orange bell pepper, chopped
  • 1/2 yellow bell pepper, chopped
  • 1/2 cucumber, chopped
  • 1/2 cup sugar snap peas, chopped
  • 1/4 cup chopped green onion
  • 1 pint cherry tomatoes, cut in half

Instructions

  1. In a small mixing bowl, whisk vinegar, sesame oil and yogurt until well combined. Whisk in salt, pepper and garlic powder. Set aside.
  2. In a large mixing bowl, toss cabbage, peppers, cucumber, peas, green onions and tomatoes. If serving immediately, toss with dressing.
