Barbecue Chicken Sliders
For Labor Day weekend, whip together 12 sandwiches in minutes with our recipe for Barbecue Chicken Sliders.
Ingredients
Cilantro-Lime Mayo
- 2/3 cup mayonnaise
- 2 Tbsp. lime juice
- 1 Tbsp. chopped cilantro
- 1 clove garlic, minced
- 1/2 tsp. salt
- 1 Tbsp. olive oil
- 1 clove garlic, minced
- 1 1/2 cups barbecue sauce
- 1/4 cup pineapple juice
- 2 tsp. Worcestershire sauce
- 1/2 tsp. chili powder
- 1/8 tsp. cayenne pepper
- 3 cups shredded chicken
- 12 Hawaiian rolls, cut in half
- 1 cup chopped fresh pineapple
- 1/2 red onion, sliced
- 2 cups shredded Cheddar cheese
- 1 Tbsp. butter, melted
Instructions
- Preheat oven to 350°.
Cilantro Lime Mayo
- In a medium bowl, combine mayonnaise, lime juice, cilantro, garlic and salt. Set aside.
Sliders
- In a medium sauce pan over medium heat, add oil and garlic. Heat about 1 minute. Add barbecue sauce, pineapple juice, Worcestershire, chili powder and cayenne. Whisk to combine and cook until thickened, about 5 minutes. Add shredded chicken and toss to coat.
- Place bottom half of rolls on a baking sheet. Spread mayo mixture overtop. Top with an even layer of chicken mixture, pineapple, onion and cheese. Place top half of buns on top and brush with melted butter. Bake about 10 to 15 minutes, until golden.
