Blueberry Quinoa Salad
For lunch, treat yourself to Blueberry Quinoa Salad. Packed with fruits and veggies, this salad is full of health benefits and flavor.
Ingredients
Salad
- 1 cup quinoa, uncooked
- 1 avocado, chopped
- 1 cup blueberries
- 1 cup sweet corn
- 1/2 cup chopped green onions
- 1/2 cup Feta cheese
- 1/2 cup chopped pistachios
Dressing
- 1/4 cup cilantro leaves
- 1/4 cup olive oil
- 2 Tbsp. lime juice
- 1/2 jalapeño, seeded
- 1/4 tsp. garlic powder
- 1/4 tsp. salt
- 1/8 tsp. freshly ground black pepper
Instructions
Salad
- Cook quinoa according to package directions. Transfer to a large bowl. Add avocado, blueberries, corn, onion, Feta and pistachios.
Dressing
- In a blender, add cilantro, olive oil, lime juice, jalapeño, garlic powder, salt and pepper. Blend until smooth. Pour over salad and toss to combine. Serve at room temperature or cold.
