Blueberry Quinoa Salad

For lunch, treat yourself to Blueberry Quinoa Salad. Packed with fruits and veggies, this salad is full of health benefits and flavor.

Ingredients

Salad

  • 1 cup quinoa, uncooked
  • 1 avocado, chopped
  • 1 cup blueberries
  • 1 cup sweet corn
  • 1/2 cup chopped green onions
  • 1/2 cup Feta cheese
  • 1/2 cup chopped pistachios

Dressing

  • 1/4 cup cilantro leaves
  • 1/4 cup olive oil
  • 2 Tbsp. lime juice
  • 1/2 jalapeño, seeded
  • 1/4 tsp. garlic powder
  • 1/4 tsp. salt
  • 1/8 tsp. freshly ground black pepper

Instructions

Salad

  1. Cook quinoa according to package directions. Transfer to a large bowl. Add avocado, blueberries, corn, onion, Feta and pistachios.

Dressing

  1. In a blender, add cilantro, olive oil, lime juice, jalapeño, garlic powder, salt and pepper. Blend until smooth. Pour over salad and toss to combine. Serve at room temperature or cold.
