Slow Cooker Beef and Broccoli

This week, we’re cooking up all sorts of hearty weeknight dinner dishes. Keep things simple and make Slow Cooker Beef and Broccoli, served over rice.

Ingredients

  • 1 cup beef broth
  • 1/2 cup low sodium soy sauce
  • 1/4 cup brown sugar
  • 1 Tbsp. sesame oil
  • 3 cloves garlic, minced
  • 2 lbs. sirloin steak, sliced thin
  • 4 Tbsp. cornstarch
  • 4 Tbsp. water
  • 1 lb. fresh broccoli florets
  • 1/4 cup chopped green onions
  • White rice, cooked

Instructions

  1. To a slow cooker, add beef broth, soy sauce, brown sugar and sesame oil. Whisk together until smooth. Add steak slices and toss to coat. Cover and cook on low for 4 hours.
  2. In a small bowl, whisk together cornstarch and water. Add to slow cooker and stir to combine. Add broccoli and green onions and stir. Cover and cook an additional 30 minutes, until broccoli is soft and sauce is thick. Serve over rice.
