Chicken Cordon Bleu Bites
This week, we’re gearing up for a holiday season filled with delicious food! For an upcoming holiday party, bring Chicken Cordon Bleu Bites as an appetizer.
Ingredients
- 1/2 cup vegetable oil
- 1 cup unsweetened almond milk
- 1 cup flour
- 2 tsp. seasoned salt
- 1/4 tsp. cayenne
- 1 tsp. garlic salt
- 1 cup Panko bread crumbs
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 4 slices ham, cut into 1-inch squares
- 4 slices Swiss cheese, cut into 1-inch squares
- 2/3 cup mayonnaise
- 1 Tbsp. Dijon mustard
Instructions
- In a large pan over medium heat, heat oil.
- In a medium bowl, add milk. In another medium bowl, combine flour, seasoned salt, cayenne and garlic salt. In a third medium bowl, add bread crumbs.
- Dip each chicken piece in milk to coat, then toss in flour mixture. Dip in milk again, then coat with bread crumbs.
- Place chicken in oil and cook for 3 to 5 minutes on each side, until cooked through. Remove from pan and top each piece with a slice of cheese, two slices of ham and one more slice of cheese. Put back in pan and heat if you need to melt cheese.
- In a small bowl, mix together mayonnaise and mustard. Serve chicken bites with dipping sauce.
