Loaded Potato Meatloaf
Change up your usual meatloaf recipe and instead make Loaded Potato Meatloaf, topped with lots of garlic mashed potatoes and Cheddar cheese.
Ingredients
- 1 1/2 cups water
- 1/2 cup milk
- 1 (4 oz.) package garlic instant mashed potatoes
- 1 lb. lean ground beef
- 1/2 onion, diced
- 1/4 tsp. garlic powder
- 1 Tbsp. brown sugar
- 1 Tbsp. Worcestershire sauce
- 1 cup seasoned Italian bread crumbs
- 1 egg
- 1 1/2 cups shredded Cheddar cheese
- 4 slices bacon, cooked and crumbled
Instructions
- Preheat oven to 400°.
- In a medium saucepan over medium-high heat, add water and milk and bring to boil. Remove from heat and stir in instant mashed potato mix. Set aside.
- In a large mixing bowl, combine ground beef, onion, garlic powder, brown sugar and Worcestershire sauce. Add bread crumbs and egg. Continue mixing until well-combined.
- Press meat mixture into an 8 x 8-inch baking dish. Spread mashed potatoes evenly over top. Top with cheese and bacon. Cover with foil and bake for 30 minutes. Uncover and bake for 10 more minutes.
