Shrimp Roll Sandwiches
This one is for all you seafood fans. Not only are these sandwiches delicious, but they will remind you of your favorite summer vacation spot. They are perfect for a dinner, or even a party! You and your guests will love this easy dish, guaranteed.
What you will need for this recipe is 4 Sparkle hoagie or hot dog buns fresh from the bakery, 1 pound of chopped and cooked shrimp, 1/3 cup of mayonnaise, 1/2 teaspoon of Dijon mustard, 1/2 cup of finely chopped celery, 1 teaspoon of finely chopped dill, 1 teaspoon of lemon zest, 1 teaspoon of lemon juice, 1/4 teaspoon of seafood seasoning, 1/4 teaspoon of salt, 1/4 teaspoon of freshly ground black pepper, 1/4 teaspoon of garlic powder and 1/4 cup of chopped chives, for topping.
In a large bowl, mix together shrimp, mayonnaise, Dijon mustard, celery, dill, lemon zest, lemon juice, paprika, salt, pepper and garlic powder. Stir until the shrimp is well coated with the mayonnaise mixture. Fill each hoagie or hot dog bun with an equal amount of shrimp mixture and top with chives. If you prefer, you may toast or grill lightly buttered hot dog buns before filling.
